FatMan's Simple Tofu Scrambler

Perfect for breakfast, brunch, or even a light dinner, FatMan's Simple Tofu Scrambler is your go-to recipe for a meal that's as enjoyable to prepare as it is to devour. Whether you're a long-time vegan or just exploring healthier food options, this scrumptious tofu scramble is sure to impress with its simplicity and burst of flavors.

Ingredients
  

  • 1 pkg 15 oz extra firm tofu (drained and pressed to leave minimal water)
  • 3 Tbsp nutritional yeast
  • 2 Tbsp liquid aminos
  • 1 Tbsp onion powder
  • 1 tsp garlic powder
  • ¼ cup water
  • 1 green bell pepper diced
  • 1 medium onion chopped
  • 1 pkg 8 oz mushrooms (sliced)

Instructions
 

  • Hand crumble tofu into a mixing bowl and add nutritional yeast, liquid aminos, onion powder, and garlic powder. Stir until mixed thoroughly. Place water, green pepper, onion, and mushrooms in a nonstick skillet and heat covered on high until veggies are softened (about 7 minutes). Add tofu mixture and continue to cook. Turn and fold mixture until tofu is heated through.
