Ingredients
  

  • 1 small onion diced
  • 1 can 15.5oz black beans (drained)
  • 1 cup of corn cooked fresh or frozen
  • 1 cup of your favorite salsa
  • chopped fresh cilantro
  • 2 Tbsp lemon juice

Instructions
 

  • In a large bowl, combine the rinsed black beans, corn, and finely chopped onion.
  • Add the salsa and lemon juice to the mixture. Stir to combine everything evenly.
  • Mix in the chopped cilantro, and season with salt and pepper to taste.
  • Serve immediately, or let it chill in the refrigerator for an hour to enhance the flavors.
