Ingredients
- 5 lbs. red potatoes
- 10 cloves of garlic
- 1 c unsweetened plant milk
- 2 T onion powder
- 3 T liquid aminos
- 1/2 c nutritional yeast
Instructions
- Wash and quarter potatoes (no need to peel) and place them along with the peeled garlic cloves in a 6 quart pot and fill with water until potatoes are covered. Cook covered on high until water comes to a boil. Remove cover and boil for 20 minutes. Drain potatoes and garlic and place them back in the pot, add plant milk along with the remaining ingredients and whip with a hand mixer until potatoes are smooth and creamy. Serve on a heaping pile of mixed greens and top with ground red pepper. (Optional)
