Triple Berry Oat Muffins

These are a family favorite. They are perfect for a snack, breakfast, or lunch on the go!

Cook Time 30 minutes

Servings 4

Ingredients
  

  • 4 overripe bananas
  • 3 cups of rolled oats
  • 1 ½ cup fruit I will use a frozen triple berry blend
  • 1 tsp vanilla extract
  • ¼ cup maple syrup optional

Instructions
 

  • Mash bananas and maple syrup in a mixing bowl with a fork. When bananas are smooth, and a pudding-like consistency stir in the extract and fruit. Lastly, stir in oats until uniform consistency. Spoon into silicon muffing pan or form by hand and place on parchment lined baking sheet then bake at 375˚F for 30 to 35 minutes.
  • *You can also do everything in a power mixer
