Sweet Pepper Vegan Pasta Salad

Ingredients
  

  • 1 lbs whole wheat pasta
  • 2 colored bell pepper diced
  • 1/2 medium red onion diced
  • 10 cherry tomatoes halved
  • 1/4 cup maple syrup
  • 1/2 cup apple cider vinegar
  • 3/4 cup water
  • 1 Tbsp parsley
  • 2 tsp dill weed
  • 2 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp sea salt optional

Instructions
 

  • Cook pasta as per instructions on package. With pasta cool, add onion, tomatoes, and peppers. In a small mixing bowl add the remaining ingredients including the spices and stir. Add mixture to the noodles and stir to ensure the pasta is completely coated. Let stand in the refrigerator for at least an hour. For best results refrigerate overnight.
