Quick and Easy Veggie Burgers
These burgers are great and the hold together like no other burgers out there. The recipes is really easy to modify too.

Ingredients
- 4 cups cooked rice
- 4 cups mixture of fresh or frozen veggies
- I'll be using onion, celery, and carrot
- 2 cups oat flour ground oats
- 1 Tbsp onion powder
- 1 Tbsp parsley
- 1 tsp sea salt
- 1 tsp black pepper
- 1 cup water
Instructions
- Cook rice as per instructions. Roughly cut fresh veggies up and place in a food processor and pulse until coarsely chopped. (you can also do this by hand) Add 4 cups of the mixture to 4 cups of the cooked rice along with all the spices. Add 1 ½ cup of the oat flour along with ½ cup of water and mix thoroughly. Mixture should be dough-like and stick together. If mixture is too wet add the remaining oat flour, if it is too dry add the remainder of the water. With wet hands, patty the mixture into burgers and place on a baking sheet lined with parchment paper. Bake at 425˚F for 30 minutes or until crispy.
- Makes 8-10 burgers. Try different combinations! Ex. add black bean and corn with salsa and chili powder.
- Note: they freeze well after baking.
